Each morning, Executive Chef José Carles visits Royal Isabela’s River Farm and Gatehouse Garden to see what the good earth has given us. Only then does he plan the day’s menu at the Restaurant at La Casa, Royal Isabela’s restaurant. As advocates of both slow food and locavore movements, we combine classic European cooking techniques with Puerto Rican ingredients to create the Restaurant’s signature farm-to-table cuisine. The menu spotlights Royal Isabela’s very own vegetables, herbs and fruits, as well as the bounty from local fishermen, cheesemakers and small family farms.
